My husband brought home a HUGE zucchini from our friend's garden this week. I am very grateful for the gift but large zucchini tend to be woody. Normally, I like to slice my zucchini in half and season with garlic salt and olive oil and roast them on the BBQ or in the oven until they are nice and caramelized, but these huge zucchini just don't taste as good as the little ones (in my opinionated opinion). So I have decided that in the morning my little Sophie (she's 4) and I are going to make Zucchini Bread. Here are the recipes I found in my little red recipe box. I haven't decided which one I'll use. They all vary in ingredients and all sound delicious! The Pineapple Zucchini Loaf is what I am leaning towards. This zucchini is so big I may just try 2 different recipes, who knows? I will let you know how it turns out. In the meantime, I hope you enjoy these!
I hope you will note that two of these recipes are marked from Annabelle, one is from Viola. I just love these names, don't you? Just click the images above to enlarge. If you have any trouble with the handwriting, just comment me here and I will try my best to help.
Before I sign off I thought I'd show off the bowls I found at an estate sale this weekend! I was so excited to find these because they match my little recipe box. It's a cherry blossom pattern, apparently. I just love them! For $20, I thought it was a steal. Have a GREAT weekend!
